My Wednesday morning to early afternoon was not far from being a typical day. Center for Culinary Arts (CCA, Manila) together with Institut Culinare Disciples Escoffier (ICDE) invited me to witness 2-star Michelin Chef Thierry Drapeau at work in the kitchen.
Chef Drapeau demonstrated two of his masterpieces in front of aspiring chefs, foodies, connoisseurs and few members of the media. Everyone’s all five senses were at his beck and call during his almost two hour, step by step instructions on how to prepare his version of two soups, Pumpkin and King Prawn on Minestrone.
Born in the city of Nantes in France, Chef Drapeau discovered his passion for cooking at a very young age when he spent time with his father at a market. At the age of just 21, he was already appointed as chef de partie (station chef/ line chef) at a 2 Michelin stars restaurant, La Bateau Ivre. From then on, he lived up to his culinary passion, getting promoted to different chef titles in various restaurants in France, until he opened his own restaurant, Logis de Chabotterie. Ten years later, his restaurant was awarded with 2 Michelin stars.
Chef is more known for his “Vendee”, French-inspired dishes or what he calls as “cuisine of the soil”. His culinary style can be compared to how he says it, “I compose my dishes as if they are paintings.” I saw his sheer passion during this event. He truly emobodied why he has gone far in the culinary scene.
After Chef finished his works, and I rushing to take photos of it before everyone rushed to try, we were distributed into our own stations. We then had the opportunity to apply what we learned from the master himself. Our task, re-create the King Prawn on Minestrone.
I was very fortunate to be partnered with another passionate foodie, Nathan Uy. I was happy to take the role as ‘Sous Chef’. I was stirring, chopping and getting stuff all over the place.
After an hour, Chef Drapeau visits and says, ‘very good’ on our very own concoction. My heart was very pleased. And I was proud of our work altogether.
